Sukuma Wiki - Kenya

Hi all, this recipe for Sukuma Wiki worked really well for me! Here it is:

- 1 medium onion, chopped
- 6 cups chopped fresh collard greens
- 3 tablespoons olive or vegetable oil
- 1 cup of chopped stewed tomatoes
- 1 seeded and chopped green chili pepper
- 1 tablespoon flour
- 3 tablespoons lemon juice
- a half to one cup water

Take a saucepan and fill it with an inch of water. Take a strainer, fill it with greens and put it in the saucepan. Bring the water to boil over high heat. If the water starts to evaporate, turn it down. Cover it and steam it for 8 more minutes.

Take a frying pan and heat oil in it over a medium high heat. Add the tomatoes, onions and chilli pepper. Saute about 3 minutes. Turn the heat to low. Ads some extra oil to prevent sticking.

Next, take a small bowl and mix the half cup of water, flour and lemon juice unti it’s well blended. Pour this into the onion mixture and mix again. Take the cooked greens, an additional half cup of water, pepper and salt and mix well. Turn the heat higher to medium, cover and cook for about 3 minutes.

I am a chef in training. I can honestly say that I love this dish. One day this will be on my menu in my restaurant. I loved it.
