Pilau Rice

by Venerandah Alumasa
(Olathe, Kansas)

Here's a recipe for pilau rice.

Ingredients:
- two cups pishori rice
- one tsp spoon oil or butter
- one large onion
- two pieces fresh garlic minced
- two peeled and thin sliced tomatoes
- pilau masala
- 3 1/2 hot water
- salt to taste
- 1/2 pound beef or chicken, cubed. (Optional)

Directions:

Heat oil to almost smoking, add beef or your chicken together with the onions, then reduce heat immediately to medium high. In five minutes, the beef should be golden brown but not cooked.

Reduce the heat on low then add garlic, stir for 5 sec. then add pilau masala, stir until you can smell the aroma (5 min), add tomatoes and increase the heat to medium high, let them cook until soft, add water let it boil and add rice. Immediately when it starts boiling, reduce the heat on low. Cover and let it cook until all the water is finished. Remember to mix the pilau when the water is almost finished.
