Kenyan Sweet Rice

Ingredients for four to six servings:

- 4½ cups water
- 2 cups rice
- ¼ teaspoon orange food coloring
- 8 cardamom pods
- 4 tbsp vegetable oil
- 1 ½ cups sugar
- ½ cup currants
- ½ cup sliced almonds
Pinch of salt

First, thoroughly wash and rinse the rice. Boil four cups of water, then add the rice, food coloring and a pinch of salt. Then turn the heat low. When the rice is half done, drain the water and set it all aside. Take a saucepan, add sugar and cardamom, together with the remaining ½ cup water. Boil the mix until it's a thick syrup. Add the rice - stirr it so that the rise is fully coated with syrup. Cover the rice and let it boil over low heat until the rice is done al dente (should take aprox. 10 minutes). Mix the currants and almonds in, and serve hot.
