Kenyan Coconut Rice

Here's my recipe for Coconut Rice... I loved it and it's easy to make.

Ingredients for 6 persons:

- 2 cups of rice
- 2 tablespoons of thick coconut milk
- 4 cups of thin coconut milk
- A pinch of salt

Take the thin coconut milk, the rice and the salt. Put it into a bowl until it’s boiling. Reduce the heat and simmer until the rice is done. Add more thin coconut milk if the rice cooks dry before it’s done. This should take around 20 minutes. Add the 2 tablespoons of thick coconut milk right before serving, and stir. This recipe goes great with chicken or beef and vegetables. Enjoy!
