Cassava in Coconut (Muhogo wa Nazi)

by Memuna
(Nairobi)

Here's what u require.

- Boiled Cassava(cut in small peices)
- Green chillies 1 or 2 (Chopped)
- 1 small onion(Chopped)
- 1 small tomato (Chopped)
- 1 cup Light coconut milk
- 1 cup Thick coconut milk
- Salt - to taste

In a sauce pan, add the chopped ingredients, cassava and the light coconut milk, cook until the coconut milk has almost evaporated (cook over medium heat). Add the thick coconut milk and bring it to boil, allow it to cook for not more than 5 mins.

Allow the dish to cool, garnish with a few corriander leaves.

Enjoy.
